French gastronomy is world famous for many reasons: long culinary history and tradition, many varieties of soils and climates that are parts of this chemistry.

Of all the regions, Provence is special in many ways: its southeastern location, bordered by the Mediterranean sea and the Alps mountains gives it an exceptional micro-climate; being the sunniest and driest region of France, olive tree culture has bloomed, herbs are strongly aromatic and the famous rosé wine is fruity and full  in one's mouth.

Add to all that the tasty Mediterranean fishes, and you get an exceptional cuisine, looking a bit like Italian cuisine, but with its own unique character due to long, handed down traditions, with a large variety of specialties. Each locality has its own: the bouillabaisse in Marseille, the calisson in Aix, the olive oil of Vallee des Baux, the candied fruits of Apt, the goat cheese of Banon, and so many others.

 

Another interesting aspect of traditional Provencal cuisine is its positive impact on health.

Similarly to other Mediterranean countries and to Japan, combining home-grown culinary traditions and a large consumption of food of plant origin, such as fruits and vegetables, herbs and spices, and also sea-food, we observe in traditional Provence a low incidence of cancers and cardio-vascular diseases. The large amount of anti-oxidant and preventing diseases substances we can find in such food is remarkable, such as the now well studied polyphenols in olive oil, lycopene in tomatoes, sulfide compounds in onion and garlic, omega-3 fatty acids in fat fishes, resveratrol in wine and many terpenes in aromatic herbs.

This is not surprising that we found in these regions the persons holding record of longevity.It is in the famous city of Arles in Provence that has lived the equally famous centenarian Jeanne Calment. She was born in 1875 and lived in Arles for her entire life, to the age of 122 years and 164 days. She had the longest confirmed human life span in history. She surpassed the most known supercentenarians Shigechiyo Izumi and Tane Ikai.
